Recipe: Chicken meatballs with zucchini pasta

  • 18 oz. lean ground chicken breast
  • \r\n

  • 2 eggs
  • \r\n

  • 1/3 cup panko crumbs (Or use 2 bags of crushed quest protein chips salt and vinegar flavor)
  • \r\n

  • 2 tbsp. oregano
  • \r\n

  • 2 tbsp. minced garlic
  • \r\n

  • ½ cup chopped red onion
  • \r\n

  • 2-1/2 oz. goat cheese
  • \r\n

  • 6 vine tomatoes
  • \r\n

  • 3 medium zucchinis
  • \r\n

  • ½ cup tomato sauce (Natural, no salt added)
  • \r\n

  • 1 tbsp. garlic
  • \r\n

  • Sea salt and pepper to taste
  • \r\n

  1. Preheat oven to 375 F
  2. \r\n

  3. In a large bowl, mix the ground chicken breast, eggs, panko crumbs (Or protein chips), half of the oregano, 1 tbsp. garlic, onion, goat cheese, and sea salt and pepper.

  5. Form small meatballs, the size of golf balls, and place them on a baking sheet. With the ingredients, you should be able to make 12 meatballs total.
  6. \r\n

  7. Place in the oven and bake for 18-20 minutes. If you want to add a layer of crispiness to the meatballs, bake them for 18 minutes then broil for 2-3 minutes.

  9. Chop the tomatoes up and set aside.
  10. \r\n

  11. Set a nonstick skillet over medium-high heat and spray it with coconut oil. Add 1 tbsp. garlic and the remaining oregano, and cook for 2 minutes, while constantly stirring.

  13. Add the diced tomatoes to the skillet and stir it. Toss in tomato sauce. Stir, then reduce to a low heat and cover. Let it cook for 8-10 minutes.
  14. \r\n

  15. Shred the zucchini using a julienne peeler or a spiralizer. Place the raw zucchini noodles into your containers or plate, then top them with the cooked chicken meatballs and drizzle with marinara sauce. Enjoy!
